The sĂŒdback is the best regional bakery trade fair in Europe and is, therefore, a fixed point in our trade fair calendar. For us, the focus is on the exchange with our customers, partners and visitors, where we also want to stand out with our usual strengths as a service provider for the bakery sector.

backaldrinâs impressive innovative strength is also evident in the rest of its product portfolio. Besides the extremely popular ChickpeaMix also presented at iba 2023, the new product Pane Scuro was also presented. In addition to its versatility and easy handling without the need for baking tins or baskets, this mix also has a high oat flour content, which provides valuable fibre and protein. It also adds an earthy, nutty flavour to baked goods and improves the texture of the crumb.
Pane Scuro can be combined with walnuts to produce the delightful GlĂŒxNuss bread. The hearty aroma, juicy crumb and crispy crust promise an extraordinary taste experience.
Trade fairs are places for relationships: contacts are made and needs can be communicated. It is important for us to find out how we can best make our know-how available to the market in order to support our customers worldwide. The sĂŒdback in Stuttgart is a very good place for this.

The focus on fine pastries was on the vegan line: with BerlinerMix vegan, CakeMix vegan and vegan fillings, backaldrin was right on trend. These vegan products make it possible to produce traditional deep- fried pastries like doughnuts without any animal products, while still retaining the authentic taste and texture that everyone knows and loves. The vegan hazelnut, walnut or poppy seed fillings are perfect for a wide range of fine yeast dough pastries made with HTK Soft, which delivers excellent taste and texture.
In every innovation lies the motivation to drive the bakery sector forward, and to shape it in the long term. We do not just focus on new products, but think beyond the bread basket and try to give the sector new impetus worldwide.

This diverse product portfolio was, of course, rounded off with Austriaâs crispiest ambassador: The Original Kornspitz. In its anniversary year, the internationally popular classic was still a hit. It has been an important part of every bread basket and every trade fair for 40 years now.
