The Renaissance of Heritage Grains
backaldrin’s new fine bakery creations breathe new life into ancient grains at Südback 2017. Emmer, einkorn and spelt unite in the new UrkornCakeMix to lend the numerous shaped and sheet cakes an incomparably juicy taste. These heritage grains make a masterful debut in backaldrin’s cake range.
Heritage grains, such as emmer, einkorn and spelt, were already cultivated by our ancestors thousands of years ago. As time went by, they were replaced by new, higher-yielding varieties of grain. Today these grains are again being cultivated traditionally and can be found in the new UrkornCakeMix by backaldrin. Emmer and einkorn harmonise with the delicately sweet and nutty spelt. Through their careful composition, the three varieties of grain are responsible not only for the unique honest-to-goodness taste experience but also for the rich golden colouring of the cake variations.
Following the All-In method, with the simple addition of water and cooking oil, a basic batter is created that can be used for a variety of shaped and sheet cakes with very good baking properties. Through the use of various shapes, from gugelhupf and saddlebacks to cake rings or even sheet cakes, UrkornCakeMix brings greater variety to the product range. Decorated with cake glaze or with chocolate, they are also eye-catching. The backaldrin confectioners have created a variety of multifaceted recipes, not only in shape and appearance, but also in taste. By adding chocolate chips, dried fruit and much more, the basic batter also allows for individual creations.
Diversified cake indulgence
Hazelnut meal and coarsely chopped walnuts give the Urkorn Nut Cake its distinct nuttiness. The Urkorn Apple Gugelhupf with Floriani® Apple Slices is particularly juicy; a touch of cinnamon completes the cake glaze, with Viennese Fondant as the base. The Urkorn Pumpkin Seed Cake with pumpkin seeds and pumpkin seed oil is a fluffy yet earthy taste experience, rounded off by a cake glaze made with Fruttigel Neutral and pumpkin seed oil. Grated carrots give the Urkorn Carrot Cake its name and its special succulence, while roasted sesame seeds intensify the enjoyment.
The Urkorn Chia Cake with chia seeds and Floriani® Coconut Filling is characterised by its pleasant coconut notes, topped with a cake glaze of coconut milk and Fruttigel Neutral. With Floriani® Poppy Seed Filling, the Urkorn Poppy Seed Cake is sure to be a favourite amongst all poppy seed lovers. A cake glaze with Fruttigel Strawberry adds a delicately fruity taste. Contrary to its name, the Urkorn Kaiser Cake with rum raisins, cranberries and chopped walnuts is a delight for everyone. UrkornCakeMix is also excellent for fruit flans: the nutty and juicy cake bases, a yoghurt crème with Monaco and a layer of all types of fresh fruit, glazed with Fruttigel Neutral are a true treat.
