Colourful baked goods at the Gulfood
Colourful baked goods thanks to natural plant pigments are a highlight by backaldrin at the Gulfood 2022. The hues of the aronia berry and turmeric make for real eye-catchers in the product range. Classic Kornspitz®, traditional pretzels, sweet muffins and cookies are also on offer at the exhibition stand.
The power berry, Aronia, is compelling in every way: it contains many secondary plant substances, a high proportion of vitamins and minerals, and it has a low sugar content. Its red and blue plant pigments combine to lend a striking purple colour to bread and pastries. Clean label AroniaMix by backaldrin impresses with a variety of recipes for bread, rolls and fine bakery. The creations are characterised by a finely splintered crust, subtle notes of caramel and a fluffy purple crumb with an almost fruity taste. AroniaMix is also perfect for use in sweet yeast dough and cake batters. The possibilities are endless as AroniaMix can be added in different dosages to any recipe. The backaldrin master bakers recommend a dosage of between 10 and 25%. AroniaMix not only creates a feast for the eyes, it also enhances baked goods with the valuable ingredients of the power berry.
Let the sunshine in
Thanks to its colour and distinctive taste, turmeric is also on everyone’s lips. Particularly in the Arab world, the turmeric root is a well-loved and widely-used spice. backaldrin also brings it to various baked goods. The plant pigment curcumin adds a sunny yellow colour and unmistakeable taste to bakery products. With clean label KurkumaMix from backaldrin, bright yellow comes to the bakery counter, providing a real visual highlight. The products have a pleasantly mild-spicy taste, excellent fermentation stability and good volume. For best results, backaldrin’s master bakers recommend a dosage of 5% on flour.
Trends and Classics
Alongside trends, there is always a place for the tried and tested. Classics like the Kornspitz® and pretzels have made backaldrin virtually famous at the Gulfood. The Gulfood repertoire is supplemented by sweet creations from the backaldrin master confectioners. These include gingerbread-flavoured macarons, muffins – from red velvet to chocolate and vanilla – as well as classic sponge cakes. backaldrin Master Baker Günter Koxeder, on duty for the Middle Eastern region, will treat guests at the exhibition stand to fresh samples throughout the day. “After the break caused by the pandemic in 2021, we are all the more pleased to be able to welcome many of our customers again personally at the Gulfood,” says Managing Director Harald Deller.
