A colourful year comes to an end
2018 is drawing to a close. This year, backaldrin was bold with colour. The sunny yellow of turmeric and the purple shades of the aronia berry transform baked goods into true eye-catchers. AroniaMix - Attention-grabbing power berry
backaldrin’s AroniaMix made a grand entrance at iba 2018, causing a great deal of interest with its exceptionally violet colour. The aronia berry contains secondary plant substances, which are responsible for the play of colour, as well as the high content of vitamins and minerals. The possibilities with this Clean Label product are unlimited as it can be used in all bakery, from mixed wheat breads, baguettes or ciabatta to brioche, muffins and cakes.

“My Urkorn“ - Urkorn with smoked sourdough
At the iba, backaldrin once again focused on originality by presenting a smoked sourdough and thereby bring new flavour into play. In the new “My Urkorn”, the ancient grains of emmer, einkorn and Khorasan meet rye, wheat, oats, barley, rice and buckwheat. The resultant dough is soft and can be worked up by hand or via filling systems. “My Urkorn” keeps fresh for a long time, and backaldrin also offers pasteurisation instructions and bags in three different sizes for sliced packaging. There’s nothing to stand in the way of fresh enjoyment, even after several weeks.
Urkorn Concentrate - Age-old enjoyment
Emmer, einkorn, spelt and durum play the main role in backaldrin’s Urkorn Concentrate. The ancient grains lend the many possible types of bread and bread rolls a fine aroma and delicately buttery to subtly nutty notes. Wholegrain wild rye sourdough complements the mixture with an intense yet balanced taste. Bread and rolls have an elastic juicy-soft crumb that also slices very well and stays fresh for long, making this Clean Label product a real win for any bakery.
